Sodium chloride (NaCl, table salt) is a salt that can be used to increase the sodium and chloride levels of the brewing water. Both sodium and chloride improve mouthfeel and fullness, round out flavors, and accentuate the sweetness of malt. Sodium chloride is particularly useful for creating a water profile when brewing a Gose-style sour beer. Do NOT use any kind of sea salt or other specialty salts, which contain a variety of minerals besides sodium and chloride.[1] It may be wise to avoid iodine and anti-caking additives as well.
